Chard and Chickpea Salad If you like your bitter greens, go no further. A nice, crisp bitter salad! one bunch swiss chard, sliced into ribbons half bunch parsley, coarsely chopped 1 c or less nicoise olives, pitted and sliced (do not, under any circumstances, used canned olives!) 1 can marinated (or not) artichoke hearts 1 can garbonzo beans 1 whole lemon, cut into wedges for juicing olive oil salt to taste Just toss all the salad ingredients together, then squeeze the lemon juice all over, sprinkle on a touch of olive oil and some salt if you like. Because the greens are hearty, this salad will keep for several days.
