this recipe comes from my friend chris rapier, who has been hosting the most fabulous thankgiving dinners for as long as i have known him. this is his cranberry sauce recipe, which he used to make extra of so i could take some home with me. *make the night before you intend to serve!* 1pkg cranberries 1/2 cup sugar (i substituted honey, about 1/4-1/3 cup) 1/2 can oj concentrate (i used the calcium enriched for a healthier dish) 1 cup water powdered ginger, cinnimon, allspice (tsp each, or more to taste) anyway, put the cranberries, sugar, oj and water in a big pot. put it on med high and bring to a boil. once its boiling ramp the temp down so that its just kind of bubbling not - not like all foaming up. Start the spices and let it cook for around 10 to 20 minutes. The less you cook it the more whole cranberries you'll have. The more you cook it the more saucey it will be. put it in the fridge and let the flavors develop overnight. serve at room temperature with your holiday dinner.
