Curry Croutons This is a kind of "wing it" recipe, so do your best and improvise. One loaf of bread, day old if possible (it's cheaper!) enough olive oil to flavor that much bread minced garlic curry powder (use a "real" one from a spice shop!) salt Slice or tear the bread into crouton sized pieces. Place on cookie sheets in a 400F oven, and bake until slightly toasted. Meanwhile, in a large skillet, heat the olive oil, garlic and curry for just a few minutes, until fragrant. DON'T BURN THE GARLIC!! Take off the heat and allow to cool down. Now you need to somehow combine the curry olive oil with the bread...be creative, I don't have a great method for this. I pour some over the croutons in a large bowl, and then tranfer those curried croutons to a large zip lock bag, when all is said and done, I add a little more olive oil to the pot and try to get the last bits of curry out and dump it in the bag. I know, making croutons is always such a pain in the ass, but I seriously can't enjoy a home made soup without home made croutons!
