Vegetarian Gyros I had this once at the Capital Hill Elysian Brewing Co., (http://www.elysianbrewing.com/) and then I craved it like crazy, so I recreated at home. This is the recipe for one gyro, but I usually prep enough to eat it for several days. 1/2 pita*, warmed slightly in microwave "field roast" vegetarian meat (available at most healthier groc stores) several de-pitted greek olives, sliced roasted red pepper slices, sliced into bite size pieces crumbled feta chopped de-seeded cucumber chopped scallion (if you make the tatziki, use the remainder here) tatziki sauce (below) Heat the field roast in the microwave until hot. Slightly warm the pita in the microwave to make it more pliable. Stuff the pita with the field roast, olives, red pepper, feta, cuke and scallions. Top with the tatziki sauce. Enjoy! Tatziki Sauce (how do you spell it, anyway?) half a cucumber, de-seeded all of the white part of one scallion 2-3 garlic cloves a few teas. of lemon juice a few pinches of dried dill a cup or slightly more lowfat plain yogurt optional: a few tablespoons of ranch dressing salt&pepper Blend everything in food processor until smooth, adjusting seasonings to taste. Let sit for about an hour before using so the flavors meld.
