Another fabulous vegetarian recipe from the fabulous Jen. Boy she sure loves her squash! I must note that the stuffing is so delicious that I have to really restrain myself not to just eat it all up before stuffing the squash. 1 med butternut squash 1Tbs butter 1/2c minced onion 1/4lb minced mushrooms 1/2 stalk celery, minced 1 lg clove garlic, minced (I probably usually use more, but that's what I have written down) 1/4tsp salt 1/4tsp sage lots of black pepper 1/4 tsp thyme 1Tbs lemon juice 1c good bread crumbs 1/2c grated cheddar cheese 1/8c sunflower seeds 6-8 dried apricots, diced preheat oven to 350F Cut squash in half, lengthwise, remove seeds. Bake, facedown, on an oiled tray for 30min. Melt butter in lg skillet, add onion, sauté 5min, add mushrooms, garlic, celery and spices-saute about 10min. Stir in remaining ingredients, mix, adjust seasonings to taste. Fill squash (it will be way more stuffing than will fit into the squash, just pile it on top), bake, covered, 20-30min. It's really easy to make two or three of these at the same time, too. Mmmmm, squash!
