French Vegetable Soup

  • Ginger Pea Soup: Ginger and pea soup? I created this because I loved a cafe's Ginger Pea Soup so much I had to make it at home.

  • Cream of Broccoli Soup (lowfat): This is serious comfort food for me, I love this soup so much I'll drag myself out of bed and to the store when ill, just so I can spend the next few days eating this soup. Also, when I'm out of town for a while, and start to miss my own cooking, this is usually one of the first things I'll make when i get home. That said, you have to actually like cream of broccoli soup in general to appreciate this soup. It's also very easy!

  • Borscht: Russian peasant beet soup. A brilliant beautiful red, and a nice earthy winter soup. Serve with creme fraiche and fresh dill to make it fancy enough for guests. I learned to make this from an old boyfriend from Poland, we made it together all the time!

  • Cheaters Homemade Chicken Soup.: You can make a pot of homemade chicken soup from one of those already roasted supermarket chickens!

  • French Onion Soup: It's a fussy soup, what with the melting the cheese and the long cooking of the onions, but if you want it, you want it! It's nice to make it the night before snowshoeing, and the have it when you get back!

  • French Veggie Soup.: This is one of my all time favorite soups, a light white wine broth, artichoke hearts, baby potatoes, pearl onions, YUM! This is the soup pictured above.

  • Cape Flattery Salmon Chowder : Named after the most beautiful place on earth, which happens to be a 3 hour drive from my house. This is a creamy salmon chowder, ridiculously popular with my friends, neighbors and coworkers and anyone who tries it. You can't go wrong with bacon, heavy cream and wine, is all I'm saying.

  • Sunshine in A Bowl Soup: Thisis the brightest, most cheerful, zingy tomato soup ever. I absolutely love it. You must serve the curry croutons with it, for the perfect combo. (curry croutons recipe included in this link, and also below.)

  • Vegetarian Chili: This veggie chili is made with bulghar wheat instead of TVP, or tofu, etc. It's absolutely amazing and super quick to make, for chili! I've been making it for years and years!

    Croutons

    I know, you are thinking croutons in soups are dumb, and why bother? Really, I think most soups are improved by croutons. I'm telling you, your kitchen is already a mess, you have some downtime while the soups are simmering, just make the damn croutons. You can thank me later.

  • Curry Croutons: These croutons are perfect in the Sunshine Tomato soup.

  • Croutons : Fairly plain croutons. Improvise the spices for your own soups.
