This fresh tomato soup is like sunshine in a bowl, really. This soup is so cheerful! Serve with curried croutons (recipe below) for an extra flavor explosion. Sunshine In A Bowl Soup 2 tab olive oil 1 cup chopped onion 3 cups fresh tomatoes (I always use sweet little cherry, grape, etc.) 3 cups canned diced tomatoes (or some combination of both fresh & canned) 1/4 c chopped fresh basil 1 tsp honey or molassass 3 tab freshly squeezed lemon juice one large orange: grate the entire peel, and squeeze for some juice 2 c orange juice 3 tab chopped fresh cilantro salt & pepper to taste Saute the onions in olive oil until soft and brown, adding a few tablespoons of water at a time to keep them from burning. Add the tomatoes, basil, honey,lemon juice, and orange peel. Bring to a boil and then lower to simmer for 10-15 minutes. (If using small tomatoes like cherry tomatoes, make sure to crush them or chop them in half ahead of time, I let them cook until softened a bit and then smash them in the pot with a potato masher.) In a blender combine the orange juice and cilantro and puree. Ladle about 2 cups of the soup into the blender and puree until smooth, and then return to the pot. Heat the soup gently for another ten minutes, then serve with home made croutons, or to be extra fancy, nasturtium blossoms! Curry Croutons This is a kind of "wing it" recipe, so do your best and improvise. One loaf of bread, day old if possible (it's cheaper!) enough olive oil to flavor that much bread minced garlic curry powder (use a "real" one from a spice shop!) salt Slice or tear the bread into crouton sized pieces. Place on cookie sheets in a 400F oven, and bake until slightly toasted. Meanwhile, in a large skillet, heat the olive oil, garlic and curry for just a few minutes, until fragrant. DON'T BURN THE GARLIC!! Take off the heat and allow to cool down. Now you need to somehow combine the curry olive oil with the bread...be creative, I don't have a great method for this. I pour some over the croutons in a large bowl, and then tranfer those curried croutons to a large zip lock bag, when all is said and done, I add a little more olive oil to the pot and try to get the last bits of curry out and dump it in the bag. I know, making croutons is always such a pain in the ass, but I seriously can't enjoy a home made soup without home made croutons!
